In a commercial cut, these details are often compromised in favour of throughput speed.

When you cook a craft-prepared cut, the consistency of thickness means it cooks evenly. The appropriate fat retention means the meat bastes itself as it cooks. The clean seam work means there are no pockets of sinew or connective tissue where you do not want them.

What This Looks Like in an Online Context

A genuine craft online butchery operates a physical butchery facility with a trained team. They receive whole carcasses or primals, hang them appropriately, and prepare every cut in-house to their own specifications. They can tell you who prepared your order and how. The difference between this and a reseller who receives commercially processed product and puts it in a branded box is substantial.
