Batch Cooking for People Who Tried Batch Cooking and Hated It

Batch cooking is sold as the answer to everything, and for a certain kind of person it is. They spend Sunday afternoon with four pots going, fill twenty containers, and glide through the week smugly.

For everyone else, the first attempt goes like this. You lose six hours of a weekend. You produce fourteen identical containers of the same chilli. By Wednesday you cannot look at chilli. On Friday you throw four containers out, and you conclude that batch cooking is not for you.

The conclusion is wrong. The method was wrong.

Mistake one: cooking one thing in enormous quantity

Fourteen portions of the same meal is not a week of food, it is a punishment. Variety matters more than volume, and palate fatigue is the main reason batch-cooked food gets wasted.

Cook two or three different things in moderate quantity instead. Six portions of two dishes beats twelve of one, every time.

Mistake two: treating it as an event

Setting aside a whole Sunday afternoon is why most people do it once. It competes with the rest of your life and loses.

The sustainable version is invisible. Whenever you cook something that freezes well, make twice as much and freeze half. No dedicated session, no lost weekend, no special equipment. Over a fortnight of normal cooking you accumulate six or seven meals without ever having had a batch cooking day.

This is the single change that converts people who hated batch cooking into people who do it permanently.

Mistake three: batching the wrong foods

Not everything freezes. Attempting to batch cook food that does not is how people conclude frozen food is bad.

Good candidates are anything with sauce, stock or fat: bolognese, curries, dhal, stews, braises, soups, pulled meats, pie fillings, pasta bakes, lasagne. The liquid protects the texture.

Poor candidates are anything crisp, delicate or egg-based, raw salad vegetables, cream sauces that split, and cooked potato in chunks, which goes grainy. Mashed potato is fine, roast potato is not.

Mistake four: batching complete meals when you should batch components

Full meals lock you in. Components give you options.

Cook plain mince, shredded chicken, roasted vegetables, cooked grains, tomato sauce base and stock, and freeze those. Then on a weeknight, the same base becomes a pasta sauce, a nacho topping, a shepherd’s pie or a curry depending on what you add.

Component batching is a much better fit for households with fussy eaters or varied dietary needs, because people assemble differently from the same base.

Mistake five: bad storage, which wrecks everything

Freeze flat in bags rather than in bulky containers. They stack like files, thaw faster, and roughly double the usable capacity of a home freezer.

Portion in the size you will actually eat, not in the size the pot produced.

Label every single item with what it is, the date and how many servings. An unlabelled container will not be eaten, and that is the real source of freezer waste.

Mistake six: nothing ever comes out

Batch cooking feels productive in a way that eating leftovers does not, so food goes in and stays in.

Run a freezer night once a week where dinner comes only from what is already frozen. This is the half of the system everybody skips and it is the half that determines whether any of it works.

It is fine to buy some of it in

The point of batch cooking is a freezer with meals in it. How they got there is not a moral question.

Plenty of households run a hybrid: some home-cooked portions from doubling up, plus a few bought-in frozen meals for variety and for the weeks when no cooking happens at all. That mix is more durable than pure batch cooking, because it does not collapse the moment life gets busy.

The version that survives

Double whatever you already cook. Freeze flat. Label everything. Vary it. Eat from the freezer once a week.

No Sunday afternoon required, and no chilli fatigue.
